Kayseri is the largest city in the Cappadocia region and the primary air gateway for visitors flying to see the cave hotels and hot air balloons of Göreme. Most visitors pass through quickly - collecting a rental car and driving the 75km to Göreme - but Kayseri rewards a half-day or overnight stay. The city has a significant Seljuk heritage: the Kayseri Castle, the Hunat Hatun complex, the Döner Kümbet tomb and the covered bazaar (Kapalı Çarşı) are all worth time. Mount Erciyes (3,917m) provides winter skiing and summer trekking. The city’s culinary contribution - pastırma (cured beef), sucuk (spiced sausage) and mantı (Turkish dumplings) - makes Kayseri a genuine food destination.

Practical Booking Tips

Most visitors to Cappadocia fly into Kayseri - securing a rental car at the airport in advance is essential, as pick-up queues during peak balloon season (April–May, September–October) are long. Göreme is 75km from Kayseri Airport and most Cappadocia hotels offer airport transfer services if you prefer not to drive. If staying in Kayseri, the pastırma and sucuk in the covered bazaar are famous nationally - the Güneş Pastırma shop and Kayseri Sucuk producers in the bazaar are the established names. Mount Erciyes (ASR airport is at the mountain’s foot) has improved its ski facilities substantially in recent years and is now considered competitive with the Palandöken resort near Erzurum.
