Safranbolu is one of the best-preserved Ottoman trading towns in Turkey - a 700-mansion old city (Çarşı) built between the 17th and 19th centuries, when the city was a major stop on the Istanbul–Sinop caravan route and a centre of saffron cultivation (safran = saffron, hence the name). The mansions (konaklar) are large timber-frame structures with bay windows, plaster interiors, and separate men’s and women’s quarters - an architectural type found throughout Anatolia but preserved here in exceptional density. UNESCO designated the old city in 1994.
The city divides into three districts: Çarşı (the Ottoman bazaar quarter, with the 400-year-old hans and the copper bazaar), Kıranköy (the Greek and Jewish quarter, now quiet), and Bağlar (the summer mansions outside the canyon). We have mapped 8 top-rated Safranbolu tours below.

For Interiors
Ottoman Konak Mansion Interior Tour
Two or three mansions in Safranbolu are preserved as house museums: the Kaymakamlar Evi (the Provincial Governor’s Mansion, now a museum with original furniture), the Hacı Hüseyin Ağa Konağı, and several others. The konak interior tour visits the interiors with a guide who explains the division of space: the selamlık (men’s reception room), the harem (women’s quarters), the mutfak (kitchen in the basement), and the hayat (the central enclosed courtyard with fountain). The bay windows (cumba) project out over the street for light and ventilation.

For Food Culture
Safranbolu Saffron Farm and Harvest Tour
Saffron was the original commercial crop of Safranbolu - the crocus bulbs still grow in gardens around the town, and a small saffron revival has been underway since the early 2000s. The saffron farm visit (October–November during harvest) shows the crocus fields, the manual stigma extraction process, and a tasting of saffron tea and lokum (Turkish delight) made with saffron. Outside harvest season, the tour visits a saffron products shop.

Practical Information
Getting to Safranbolu: By bus from Ankara, approximately 3.5 hours. From Istanbul, approximately 6 hours. The nearest train station is Karabük (9 km), connected to Ankara by overnight train. Dolmuş (shared minibus) from Karabük to Safranbolu centre runs every 30 minutes.
Accommodation: Several restored konak mansions operate as boutique hotels - staying in one adds significantly to the experience. Prices from approximately $60/night for a double room with Ottoman interior.
Saffron products: Genuine Safranbolu saffron is rare and expensive - expect to pay $8–15 for 1g of authentic local saffron threads. Most “saffron” sold in tourist bazaars nationally is safflower or turmeric.
